Healthy Recipe: Roasted Red Bell Pepper Soup

As we head into the cooler months this cozy roasted red bell pepper soup is sure to warm the soul and the belly. It’s bright in color, bold in flavor, and an excellent source of vitamin A, vitamin C, and potassium. It also contains a healthy dose of iron, folate, and fiber. Not to mention, these nutrients will help keep your immune system strong—and stave off infections during cold and flu season.

We added heirloom tomatoes to this recipe providing a powerful antioxidant—lycopene! Take advantage of bell pepper and tomato season by blending up this hearty soup. You can enjoy it with sliced jalapeños, creamy goat cheese, and warm toasted bread.  

INGREDIENTS: 

2lbs. red bell peppers 

4 garlic cloves 

½ yellow Onion 

1 tbsp. olive oil 

1lb. heirloom tomatoes 

1 tbsp. Lemon juice 

Salt + pepper, red pepper to taste 

Toppings (optional) toasty bread + goat cheese, basil 

INSTRUCTIONS:

Preheat oven to 400 degrees Fahrenheit. Halve and seed the bell peppers, then arrange  them onto a baking sheet cut side down. Add the unpeeled garlic cloves to the baking  sheet. Roast until bell peppers are blackened, or about 15 to 20 minutes. 

Once the peppers are blackened, remove them from the oven and transfer them to a large bowl and cover with plastic wrap to steam. Make sure plastic wrap is tight! Steam for at least 10 minutes. 

Set garlic cloves aside. Remove plastic wrap and use your fingers to peel the charred skin from the peppers, then discard. Peel garlic cloves. 

Next, chop the yellow onion, then heat the olive oil in a skillet over medium heat. Add onions and sauté until softened and translucent. Add salt and pepper to taste. 

Add the bell peppers, garlic, onion, tomatoes, and lemon juice to a blender and pulse until smooth. You may want to strain the soup if you desire a smoother consistency. 

Add the soup into a saucepot and heat until ready to serve! Add salt and pepper to taste and top with goat cheese, basil, and toasty bread, if desired.
