I’ve put together a list of five of my fav summertime BBQ recipes that you can enjoy this weekend no matter WHAT diet the people at your table are subscribed to. These are also budget-friendly recipes that you can put together relatively quickly, so you can spend more time enjoying the rest and relaxation we all need this weekend!

TexMex Enchilada Burger

This is a #TexasStrong burger for the meat-eaters in the audience. Altogether this recipe only takes about 15 minutes to complete, making it ideal if you have a bunch of mouths to feed this weekend. I use bison meat but you can feel free to substitute any protein you prefer. Fire up the grill (or non-stick skillet) and get ready for some TexMex goodness!

I just can’t get enough of this one, because if it’s done right, I promise you can fool just about anyone into thinking they’re eating meat. Jackfruit works so well to mimic the texture of pulled pork! You’ll want to get this one started in the morning using your slow-cooker, and I promise the wait will be worth it. A vegan twist on a summer classic that everyone will enjoy!

If you or someone you’re cooking for is on the keto diet and you’re getting sick of burgers on “buns” that aren’t buns at all, I’ve got an idea: switch it up! A grill is a great place for seafood, and these bacon-wrapped scallops are loaded with flavor and the healthy fats and protein that the keto diet prioritizes. Even if you aren’t going keto, these are a great option if you’re looking to switch things up a bit this weekend. Or if you’d like to prepare a delicious snack to tie everyone over between meals.

Mediterranean Greek Turkey Burger Meal Prep

This is a meal prep recipe but it can be very easily converted into a meal for family/guests this weekend. Plus, it’s absolutely delicious so you do NOT want to snooze on it. This is easily one of my favorite recipes out of my cookbook, not only because it’s Mediterranean diet-friendly, which is my top diet, but because it’s absolutely bursting with flavor! The turkey, feta, and olives come together to create a delicious and JUICY patty that you can serve with pita or on a bun.

I LOVED the way these salmon patties turned out and I promise you will too. Salmon and avocado are both rich in healthy fats including omega-3s and 6s, and if you use grilled portabello mushrooms instead of burger buns you can keep it gluten-free for those who have sensitivities. It’s a flavorful option that you can customize to your liking by dialing the spice up or down as you see fit.
